  • Rajasthan : I am not including particular city here as this whole state still represents the rajput culture.
  • Hyderabad : Definitely for the authentic Hyderabad dum biryani and Irani chai.

I am not restricted to any cuisine or dish when it comes to learning. I am always open to learning new techniques or old. However, if I have to restrict myself to just five items; I would like to learn the process of making pasta at home from scratch maybe by a lady from an Italian village; I would like to seat and learn the process of making Papad from villagers of India; I would like to go back to my grandmother (who is no more) and would like to seat and understand how she was able to cook 500g meat to feed a family of 20; I would like to seat with the Mughlai cooks and would love to learn the process of making Dal Makhni and last but not the least I would like to go Arab countries to learn to make the perfect baklava.

For sure Kolkata and West Bengal. The variety of food that we get here is enough to choose West Bengal. In addition to that, I like the street food in Delhi; again for the variety.

My favourite place (state) to travel to in India would be Kerala as I am really fond of the food that I've tasted at Malabar restaurants in Pune. A particular city would be a choice between Pondicherry and Ooty as the vibe of both cities seems similar to Pune and both cities have a mix of traditional and modern cuisines, with their cafés etc.

Would Like to Learn:

I'm very interested right now in learning about molecular cuisine and how that can be applied to Indian dishes. I'm a huge fan of Gaggan Anand and his restaurant Gaggan and seeing what he's done has inspired me to try some of these things myself. I just purchased some equipment for my culinary experiments so we'll see what happens. That is my main interest. I am mainly a vegetarian/vegan , though I do eat a bit of fish on occasion since my husband now eats no meat but does eat fish. Because of that, I'm interested in fixing good vegan/vegetarian alternatives to his favorite comfort foods

Sadly, I am the only one in the family that has not gone to India, however when everyone else goes they stay with friends in Thiruvananthapuram, though my sister in law visits her nieces in Delhi. My sister in law started me cooking 30 years ago and I had older women in LA who took me under their wing and taught me too. I really started cooking the food of Kerala, because everyone brings back recipes for me and I really prefer the spice flavors of southern cooking.

The food here is not only delicious but also affordable to common people unlike any five star restaurant.
